Cauliflower Mashed Potatoes


INGREDIENTS:
1 head of cauliflower
3-4 garlic cloves
2 tablespoons 0% Plain Greek yogurt
1/2 teaspoon himalayan pink salt
1/4 teaspoon black pepper
1 1/4 tablespoon Flavor God Garlic Lover's seasoning
1 cup Organic vegetable or chicken broth
1 small gold potato (optional, but will make it taste even more like mashed potatoes)
1 tablespoon grass fed butter (optional)

Directions: 

1. Cut cauliflower into pieces and place in a food processor or Vitamix with all other ingredients. (Make sure the cauliflower and potato are microwaved or steamed ahead of time so your Cauliflower Potatoes come out creamy.)

2. Blend in food processor until cauliflower resembles the creamy texture of mashed potatoes. In Vitamix, start at 1 and blend on 7 for about 30-45 seconds.

Get creative!!  Mix some fresh herbs or cheese into the mixture!! 

Voila!!! Enjoy!!

21 Day Fix - Week 3

Week 3 meal plan is a little repetitive, but it is the food I like. Plus very easy non-cook meals or those meals that are little time to prepare.  Results don't always have to come from hours in the kitchen!

21 Day Fix Pizza


Let's talk about pizza.

I can't get enough. We all crave it. We all love it. We need pizza & it needs us.

I had a craving today and decided to go ahead and make it Fix approved!!! You can make however you like, but the one I made is:
1 red (chicken)
1 blue (cheese)
1 yellow (whole wheat tortilla)
1.5 green (spinach & tomatoes)











So simple. Spray the tortilla w/ olive oil and put in oven broiler at 350.  Flip to other side when you see 1st side browning & it gets a little crunchy.

After both sides are browned, layer on your homemade tomato sauce or pesto, add toppings (I sprinkled some oregano on top) and put back in broiler for about 10 min or so. Until tortilla is hard, tomatoes are soft and cheese is melted. 

What a great way to sneak in those veggies for the non-veggie lover.
